Chicken with cashew nuts is one of my favorite dish. This wonderful and colorful dish originates from china but now a days it is very popular in Thailand also. Bright color of red chilies makes this dish visually attractive and cashew nuts enhance its taste.


  • 1 ‏onion, thinly sliced
  • 1/2 cup ‏flour
  • 1/2 cup ‏cashew nuts
  • 4 cloves ‏garlic
  • 2 ‏red pepper. sliced
  • 5-6 ‏dried red chilies
  • 2 tablespoons ‏sugar
  • 4 tablespoons ‏oil
  • 1 tablespoon ‏light soy sauce
  • 1 tablespoon ‏dark soy sauce
  • 2 tablespoons ‏Thai chili paste
  • 1/4 teaspoon ‏salt
  • 1/4 teaspoon ‏white pepper
  • 350 gm ‏boneless chicken, cut into bite size pieces
  • 2-3 ‏green onions, cut into small pieces


  1. Mix flour,salt and white pepper in a bowl. Coat the chicken with this mixture and set aside.

  2. Heat 2 tablespoon oil in a frying pan and fry cashew nuts on medium heat until nuts turn golden.Take them out of the pan and place them in a dish on a tissue so that the tissue will absorb the excess oil.

  3. Now add dried chilies and fry them for 30-40 sec (so that they give bright red color to the dish).

  4. After frying cashew nuts and chilies fry floured chicken until light golden, and keep aside.(Note: At the end of this stage chicken is only half cooked).

  5. Add the remaining 2 tablespoon of oil and fry onion until transparent. Add garlic, fired chicken , fired dry chilies and continue cooking until chicken is fully cooked.

  6. Finally add light soy sauce, dark soy sauce, sugar, Thai chili paste and red chili. Continue stir frying for 3-4 min.

  7. Before turning off the heat stir fry with fried cashew nuts and green onion. Serve with Thai jasmine rice and ENJOY!
