Nothing can beat an outstanding taste of classic egg mayonnaise sandwich. A balanced combination of boiled egg and mayo with a little seasoning and few veges makes a healthy lunch for kids and a perfect tea time treat for guests. If accompanied with fries, makes it a complete lunch.
Ingredients
- 4 Fresh soft bread slices
- 4 eggs
- Mayonnaise as much as to attain a creamy consistency
- 1/2 teaspoon mustard (optional)
- 4 tablespoons Chopped spring onion
- 1 tablespoon fresh parsley, chopped
- As desired salt and pepper
- As desired white pepper
Directions:

In a pan add eggs and 1 glass of water. Place the pan on medium heat. When the water starts boiling, remove the pan from the stove. Cover the pan and wait for about 8-10 minutes, to have hard boiled eggs.

Take the eggs out of the hot water, peel them and chop them in a bowl with a fork.

In a bowl add all the ingredients along with the chopped boiled eggs. Mix well. Adjust seasoning according to your taste.

Sandwich the mixture in between your favorite bread slices with a little seasoning of freshly ground black pepper.

Cut them diagonally, place them in a serving plate with some fries. Delicious creamy sandwiches are ready to serve.
