Egg Mayonnaise Sandwich

Nothing can beat an outstanding taste of classic egg mayonnaise sandwich. A balanced combination of boiled egg and mayo with a little seasoning and few veges makes a healthy  lunch for kids and a perfect tea time treat for guests. If accompanied with fries, makes it a complete lunch.


  • 4 ‏Fresh soft bread slices
  • 4 ‏eggs
  • ‏Mayonnaise as much as to attain a creamy consistency
  • 1/2 teaspoon ‏mustard (optional)
  • 4 tablespoons ‏Chopped spring onion
  • 1 tablespoon ‏fresh parsley, chopped
  • As desired ‏salt and pepper
  • As desired ‏white pepper


  1. In a pan add eggs and 1 glass of water. Place the pan on medium heat. When the water starts boiling, remove the pan from the stove. Cover the pan and wait for about 8-10 minutes, to have hard boiled eggs.

  2. Take the eggs out of the hot water, peel them and chop them in a bowl with a fork.

  3. In a bowl add all the ingredients along with the chopped boiled eggs. Mix well. Adjust seasoning according to your taste.

  4. Sandwich the mixture in between your favorite bread slices with a little seasoning of freshly ground black pepper.

  5. Cut them diagonally, place them in a serving plate with some fries. Delicious creamy sandwiches are ready to serve.
