Shami Kababs

Enjoy this very traditional recipe of shami kababs having a combination of chicken with grams, coated and fried with eggs. Have them with your evening tea, or at any special occasion enjoy them with your meal. They will also make a healthy and yummy lunch for the kids.


  • 1/2 kg ‏Chicken
  • 125 gms ‏Chana daal (split bengal gram)
  • 1 normal ‏Onion (cut)
  • 6-8 cloves ‏Garlic
  • 1 inch piece ‏Cinnamon stick
  • 3-4 ‏Cloves
  • 2 ‏Black cardamom
  • 2 - 3 TBS or add to taste ‏Red peppers
  • ‏salt add to taste
  • 1 TBS ‏Cumin seeds cushed
  • 1 TBS ‏Coriander crushed
  • 1 inch piece ‏Ginger (cut)
  • 4 ‏Green Chilies (cut)
  • 1/4 bunch ‏Fresh Parsley (cut)
  • 1/4 bunch ‏Mint leaves (cut)
  • 2 TBS ‏Chat masala (optional)
  • 3/4 cup or add to taste ‏Spring Onion (cut)
  • 3-4 ‏Egg for frying
  • ‏Oil for frying


  1. In a pan of 1 liter water, add chicken, chana daal (split bengal gram), garlic, onion, cinnamon stick, cloves, black cardamom, red peppers, salt and cook over high flame. When water starts boiling, lower the flame to medium heat and cook for about 1 hour or till daal (gram) is tender and chicken is cooked and very tender. (make sure that water dries out by the time everything is cooked and tender). This will result in a thick mixture of daal (gram) and chicken roughly mixed together.
  2. Take out the cinnamon stick, cloves and black cardamom and discard them.
  3. Take out chicken from this thick mixture, separate its bones from the meat and discard them.
  4. Put the chicken meat in the cooked mixture and mash the mixture with the masher till everything completely mixed and incorporated.
  5. Now add and mix the rest of the ingredients to the mix and mix well.
  6. Take a small portion from the mixture, make a ball and press it with the palm to flatten it in a kabab shape. Likewise make kababs of all the mixture. Fry them or freeze them in a dish for later use. When frozen, wrap them in a food wrap to preserve their freshness.
  7. Beat eggs with a pinch of salt and red peppers.
  8. Heat oil in a pan, dip a kabab in beated eggs and shallow fry.
  9. Serve hot with your favorite dips or have them along with your main course rice.
