Vada pav… An Indian style burger which is a popular street food in Mumbai.
The vada is made up of spicy potatoes and pav is a loaf of bread. It is normally served with sweet tamarind chutney and fried green chilies.

Ingredients

  • 6 to 7 ‏Pav's (loaves of bread)
  • 1/2 cup ‏Sweet tamarind chutney
  • 1/2 cup ‏Green Chutney
  • ‏Oil for frying
  • 6 ‏FOR VADA: Large Potatoes(boiled and mashed)
  • 1/4 tsp ‏Asafoetida
  • 2 ‏Green Chili (chopped)
  • 1 tsp ‏Garlic (finely chopped)
  • 1/4 tsp ‏Turmeric powder
  • 1 tsp ‏Mustard seeds
  • 2 tbsp ‏Oil
  • 6 ‏Curry Leaves
  • 1/2 tsp ‏Salt
  • 1 cup ‏FOR BATTER: Gram Flour
  • 1/4 tsp ‏Turmeric powder
  • 1/4 tsp ‏Red Chili Powder
  • ‏Salt a big pinch
  • ‏Baking Soda a pinch
  • 1/3 cup ‏Water (to make batter)

Directions

  1. Heat 2 tbsp oil in a pan and add mustard seeds.
  2. When they start crackling add asafoetida and curry leaves. Stir and saute for 30 seconds on medium heat.
  3. Add green chilies, garlic, turmeric powder and salt. Stir again for few seconds. Turn off the flame.
  4. Lastly add boiled & mashed potatoes and mix well until the mixture is well combined. Let it cool down.
  5. Divide the mixture into eight equal portions and make round balls, slightly flatten them.
  6. Take a large bowl,combine all the batter ingredients, mix well to make thick batter. Batter should not be too thick or thin.
  7. Heat oil in a wok.
  8. Dip each round potato ball in the batter and coat it evenly. Deep fry on medium heat till golden and crisp from outside.
  9. Drain vadas on paper towels. Make all vadas in the same way and keep aside.
  10. Take pav slice them into 2 halves. Spread green chutney on one of the inner side of pav and then place the hot vada on it. In the end pour some sweet tamarind chutney and cover it with the other pav.
  11. Your hot vada pav is ready.
